Debbie’s Recipes: Sage & apple pigs in blankets

INGREDIENTS

15 smoked streaky bacon rashers
30 sage leaves
1 cooking apple, peeled, quartered, cored and thinly sliced
30 cocktail sausages
2 tbsp maple syrup

METHOD

  1. Heat the oven to 220C/ 200C fan/gas 7. Put the bacon rashers on a chopping board and scrape the flat of a knife along the rashers, holding one side taut, to flatten and stretch the bacon out thinner (to ensure crisp blankets for your pigs).
  2. Cut each rasher in half and put a sage leaf, apple slice and a sausage in the middle of each.
  3. Wrap the sausage up in the bacon, and transfer to a baking tray.
  4. Roast for 10-15 mins until the bacon starts to crisp and the sausages are cooked.
  5. Brush with the maple syrup and cook for another 5 mins until glazed.
